Corn - for Pudding or Soup
|
Cut kernels off corn and put through tomato milling machine using the largest size strainer (pumpkin screen). Mix pulp with eggs, milk, sugar and seasonings. Pour into greased baking dish and bake until firm. Yield: 8 servings
The corn pulp may be simmered in milk, or chicken broth, and frozen for future use in soup or pudding. The tomato milling machine very nicely seperates the outer indigestible skins from the smooth pulp.
