White Bean Pie

In a large bowl, mix together bean pulp and milk. Mix corn starch with water and add to mixture; and add sugar,spices, and lemon rind. Beat egg yolks and fold in, mixing well. Turn into unbaked pie shell and bake at 450 for 10 minutes. Reduce heat to 350 and bake 25 minutes longr or until set. Beat egg whites stiff with 3 tbsp sugar and spread over top of pie. Return to oven for 15 minutes until lightly browned.

2 C. white bean pulp 2 TBS. cornstarch 1/4 C. water 1 C. evaporated milk (undiluted) Grated rind of 1 lemon 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. mace 3/4 C. sugar 3 eggs, seperated (yolks from whites)
