Apple Custard Pie

Preheat oven to 450. Into the applesauce, mix the lemon rind and juice, mace, butter, egg yolks, and 1/4 cup sugar. Taste for sweetness. Pour into pastry-lined pie pan. Bake for 10 minutes. Lower heat to 350 and bake for 20-30 minutes until filling is set. Beat egg whites until stiff, gradually adding 3 tablespoons of sugar. Spread over pie filling and return to oven. Bake for 15 minutes until meringue is golden.

2 C. applesauce Juice and rind of 1/2 lemon 1/2 tsp. mace 1 tbsp melted butter 2 eggs, separated 1/4 C. sugar 3 tbsp sugar Plain pastry for 1 crust Try our Squeezo to make the apple sauce from your favorite fresh apples.
