Allspice Applesauce
Put apples in large kettle and add cider to cover bottom. Cover and steam apples over medium until soft. Put apples through tomato milling machine. Return sauce to pot and stir in remaining ingredients and honey to taste. Reheat to serve.
Yield: 16 cups
Ingredients
8 lbs. apples (approx. 40 med. size apples)
Cider
Juice and rind of 1 lemon
1 tbsp ground cinnamon
1 tsp. ground ginger
1 tsp. ground cloves
1 tsp. nutmeg
1/2 tsp. ground allspice
1/2 tsp. mace
Honey
