Garden Salsa (Pico de Gallo)

Creates a coarse or chunky salsa.
The ingredients can be finely diced or diced with a medium cutting plate for chunky salsa.
Using a serrated knife, chop tomatoes. Add 2 tbsp water for plum tomatoes. Toss together tomatoes, onions, peppers, and cilantro. Squeeze lime juice over the mixture and sprinkle salt over it. Refrigerate for 30 minutes to allow salt to draw juice from tomatoes. Stir and serve with traditional tortilla chips, or use as a side for grilled meat, squash cakes, or any other dish compatible with a bright, tart, savory accompaniment. Makes about 2 cups.
