Winter Leeks and Potatoes

Wash leeks and slice white part. Peel potatoes. Put vegetables in pot with broth. Bring to a boil and simmer until soft. Put mixture through tomato milling machine. Reserve 1 cup for bread. Freeze remaining mixture for soup base or add milk and seasonings and serve immediately. These are the basic proportions. The amounts prepared can be varied to fit your needs.
