County Fair Carrot Cake

Preheat oven to 350. In large bowl, mix together the carrots and eggs. Add oil and blend. Gradually stir in sugar, flour, salt, and baking powder, mixing well. Add nuts, vanilla, and ginger. Mix all together and turn into greased 10-inch tube pan. Bake for 1-1/4 hours until cake tests done (stick a thin piece of metal, like a skewer, into cake; if it comes out clean, cake is done). Remove from oven and glaze while still warm.
